Unit Processing Operations — Container Sanitation.

The person-in-charge shall ensure that:
A. Containers are:
- (1) Protected from contamination; and
- (2) If multiservice, adequately cleaned, sanitized, and inspected prior to filling in accordance with 21 CFR §129.80(b)(1), (c), and (d);
B. Container caps are:
- (1) Stored in a sanitary manner; and
(2) Before use:
- (a) Examined for cleanliness; and
- (b) Washed, rinsed, and sanitized as necessary to prevent contamination of finished product water; and
C. Records are made at the plant that:
- (1) Document the proper cleaning and sanitization of containers;
- (2) Are maintained for at least 2 years; and
- (3) Are available for inspection by the Department.
