Personnel; disease control and hygienic practices

A processor shall ensure adequate disease control and hygienic practices to protect against allergen cross-contact and contamination of food through instruction, training, and supervision of employees as required in 21 C.F.R. 117.10, adopted by reference in 18 AAC 34.010.
