12 Va. Admin. Code § 5-421-2040

Preset tableware.

Effective Jul 12, 2016Virginia Register Volume 32, Issue 22§§ 35.1-11 and 35.1-14 of the Code of Virginia.Department of Health

A. Except as specified in subsection B of this section, tableware that is preset shall be protected from contamination by being wrapped, covered, or inverted.
B. Preset tableware may be exposed if:
1. 1. Unused settings are removed when a consumer is seated; or
2. 2. Settings not removed when a consumer is seated are cleaned and sanitized before further use.
