The facility shall develop written policies and procedures that govern all dietetic activities. Policies and procedures must include food handling procedures, length of duration for leftovers, and opened packages of commercially prepared food in accordance with chapter 44:02:07. The facility shall review the policies and procedures biennially and revise as necessary.
