Multiuse food-contact surfaces must meet the following requirements for design and construction:

1. (1) Smooth;
2. (2) Free of breaks, open seams, cracks, chips, pits, and similar imperfections;
3. (3) Free of sharp internal angles, corners, and crevices;
4. (4) Finished to have smooth welds and joints; and

5. (5) Accessible for cleaning and inspection by one of the following methods:

   1. (a) Without being disassembled;
   2. (b) By disassembling without the use of tools; or
   3. (c) By easy disassembling with the use of only simple tools such as mallets, screw drivers, or wrenches that are kept near the equipment and are accessible for use.
