1. (a) Subject to (b) below, structures required to have a grease interceptor pursuant to Env-Wq 1012.01 shall have an external gravity grease interceptor that meets the design requirements of Env-Wq 1012.03.

2. (b) Structures required to have a grease interceptor per Env-Wq 1012.01 may use a hydromechanical grease interceptor designed and operated according to the state building code pursuant to RSA 155-A instead of a gravity grease interceptor, provided that the structure:

   1. (1) Does not have a mechanical dishwasher;
   2. (2) Does not have a deep fryer or grill;
   3. (3) Does not have an in-sink garbage grinder;
   4. (4) Uses paper service only;
   5. (5) Does not have dine-in seating and is take-out only;
   6. (6) Removes all fats, oils, and grease on cookware using paper towels that are disposed as solid waste; and

   7. (7) Has flow that will be less than 150 gallons per day, as determined from:

      1. a. The unit flow tables in Env-Wq 1008.04; or
      2. b. Metered flows pursuant to Env-Wq 1008.04.
