- (1) Non-fat dry milk must be reconstituted in a sanitary manner, preferably by the use of a centrifugal pump and funnel arrangement. It must be reconstituted within 2 hours of the time of setting, using water which is free from viable pathogenic or otherwise harmful microorganisms as well as microorganisms which may cause spoilage of cottage cheese.
