1. A. Food shall be protected from contamination by storing the food:

   1. 1. in a clean, covered container except during periods of preparation or service;
   2. 2. in a clean, dry location;
   3. 3. where it is not exposed to splash, dust, or other contamination;

   4. 4. at least 6 inches (15 cm) above the floor except:

      1. i. metal pressurized beverage containers and cased food packages in cans, glass or other waterproof containers need not be elevated when the food container is not exposed to floor moisture;
      2. ii. containerized food may be stored on dollies, racks or pallets, provided such equipment is readily movable;
   5. 5. so that it is arranged so that cross contamination of raw animal foods of one type with another, or ready to eat foods is prevented.
