Rule 40-7-18-.04. Preventing Food and Ingredient Contamination

Food shall be protected from cross contamination by:

1. (a) Separating raw agricultural products requiring pathogen destruction during storage, preparation, and holding from ready-to-eat foods not requiring further processing, except when combined as ingredients.
2. (b) As specified under 40-7-1-.12.
