(a)
- (1) Menus shall be planned and written a minimum of one (1) week in advance and dated as served.
- (2) The current week’s menu, including routine and special diets and any substitutions or changes made, shall be readily available and posted in one (1) or more conspicuous places in a public area.
- (3) All substitutions made on the master menu shall be recorded in writing.
- (4) Cycled menus shall be rotated so that the same weekly menu is not duplicated for at least a three-week period.
- (b) Records of menus, as served, shall be maintained for at least thirty (30) calendar days.
