20 CAR § 417-422 – Minimum daily food requirements

(a) All residents shall be served an approved, appetizing, adequate diet that conforms to the dietary reference intakes of the Office of Disease Prevention and Health Promotion.
(b) A minimum of three (3) nutritionally adequate meals per twenty-four-hour period shall be provided for each resident unless otherwise directed by the resident’s physician or other authorized healthcare provider.
(c) Not more than fourteen (14) hours shall elapse between the serving of the evening meal and breakfast the following day.
