(a) Each client must receive at least three (3) meals daily, at regular times comparable to normal mealtimes in the community with:
- (1) Not more than fourteen (14) hours between a substantial evening meal and breakfast of the following day, except on weekends and holidays when a nourishing snack is provided at bedtime, sixteen (16) hours may elapse between a substantial evening meal and breakfast;
(2)
- (A) Bedtime snacks of nourishing quality shall be routinely offered to all clients requesting such and whose diets do not prohibit the service of this night feeding.
- (B) Milk or juices, and cookies, fruit, or crackers shall be offered; and
- (3) Not less than ten (10) hours between breakfast and the evening meal of the same day, except as provided under subdivision (a)(1) of this section.
(b) Food must be served:
- (1) In appropriate quantity;
(2)
- (A) At appropriate temperature.
- (B) Hot foods shall be served at no less than one hundred fifteen degrees Fahrenheit (115˚ F).
- (C) Cold foods must be served between forty-five and fifty-five degrees Fahrenheit (45˚ F - 55˚ F);
- (3) In a form consistent with the developmental level of the client; and
- (4) With appropriate utensils.
- (c) Food served to clients individually and uneaten must be discarded.
